Ruby Sneak Peek

If the release of Ruby’s sister Marsie (skin-contact Marsanne Muscat) was all about aromatics, then Ruby is all about tension. Made from 100% Ruby Cabernet, Ruby is a young, fresh, soft and medium-weighted red wine with raw, unfined, unfiltered moreish acidity. Confected raspberry is the primary flavour, but there’s a slight mint character in the background too, which adds interest and personality. Its mouthfeel has amazing tension and texture sure to leave you salivating.

Winemaker Nick Brown crafted Ruby from 100% Estate-grown Ruby Cabernet grapes in Wahgunyah on 6 March 2023. The grapes were hand-picked and pressed after four days on skins. Ruby underwent natural primary fermentation and natural malolactic fermentation. It was pressed to barrels at 8 Baume and aged in old 225L barriques and 500L puncheons. Nick plunged the ferment once daily; the wine has minimal tannin, just enough to carry its gorgeously sappy acid. Ruby Cabernet is not common. Created by Dr. Harold Olmo in the 1930’s, he crossed the varieties Cabernet Sauvignon with Carignan. At All Saints Estate, it has historically been used in blends but with its sweet red berry fruit profile, Nick had the idea that using the fruit from our Ruby Cabernet grapes would make the perfect chillable red. Lucky for us, his predictions were right! Ruby is vibrant, mouth-smacking, and sings when slightly chilled.

Ruby is perfect for summer and warmer days. Pop it in the fridge and serve at 4pm alongside a grazing platter laden with prosciutto, salami, and fatty meat to cut through the acid in the wine. A red duck curry is Nick’s dream match, as the creaminess would cut through the wine beautifully. A pork ragu would do the job just as well!
